The weekend tasting bar
We roll up the roastery door on weekend mornings and pour whatever came off the drum that week. Three cups side by side so you can taste the difference — $6, or free if you leave with a bag.
Six seats, walk-in only. We don’t take reservations — if it’s full, the wait is usually one cup long.

Roasting at altitude
At 7,400 feet the air is thin enough that a roaster behaves like somebody else’s roaster. Heat leaves the drum faster, the beans take longer to get where they’re going, and every curve we brought up from sea level was simply wrong.
It took the better part of two years and a lot of ruined pounds to work out our own. We roast longer and gentler than most, and we stop earlier than the numbers say we should, because up here the numbers lie a little.
The other half of it is your kettle. Water boils at about 198°F in this town, not 212°F, so a cup brewed here tastes softer than the same beans brewed in the valley. We roast for the mountain and write the valley notes on the bag.
